From Family Circle Healthy Family Dinners (Wiley, 2011), this  crowd-pleasing salmon recipe features a sweet glaze bound to turn even  the pickiest grandkids into fish fans. The whole meal – snow peas and brown rice  included – clocks in at 15 grams of fat and under 500 calories, meaning it as  healthy as it is delicious.

Brown Sugar Glazed Salmon
Ingredients:
4 2-inch wide salmon fillets (about 1 1/2 pounds total)
1/4 cup packed dark-brown sugar
2 teaspoons unsalted butter
2 teaspoons Dijon mustard
1/4 teaspoon salt
1/4 teaspoon black pepper
8 ounces steamed snow peas
2 cups heat-and-serve brown rice

Directions:
1. Heat oven to 325 degrees F. Line a small baking sheet with nonstick aluminum foil. Place salmon on prepared sheet.

2. In a small bowl, stir together brown sugar, butter, mustard,  salt, and pepper. Carefully spread over salmon pieces, dividing equally.
3. Transfer salmon to 325 degrees F oven and bake for 25  minutes, or until fish flakes easily with a fork. Serve with snow peas and rice  on the side.
