Chilled olive oil makes the best spread.
Pour some olive oil in a small jar and place it in your fridge. If is doesn't solidify put the jar in the freezer for a day or two.
Use your cold olive oil as a spread when making grilled cheese sandwiches, on all sorts of bread.
Of course you can use your olive oil spread in any recipe you would normally use liquid olive oil in.
