Smoked Salmon Crostini
Whether as a prelude to a larger meal or as a solid snack, this elegant finger food hits the spot.

Smoked Salmon Crostini
Ingredients
  • 1/2 loaf French baguette
  • 3 tablespoons olive oil
  • 8 ounces cream cheese
  • 2 ounces water
  • 1/2 teaspoon dried dill
  • 1/2 teaspoon dried chives
  • 3 1/2 ounces Alaskan smoked salmon, trimmed to size
  • Sprigs fresh dill
  • 1 tablespoon capers, optional garnish

Total time: 30 minutes
Directions
  1. Preheat oven to 400 degrees F.
  2. Evenly slice bread into thin sections. Lightly brush each side with olive oil. Place on baking sheet. Bake for about 10 minutes or until golden. Remove from oven.
  3. Meanwhile, combine cream cheese, water and dried herbs in large mixing bowl. Stir ingredients until well blended, about two minutes.
  4. Spread softened cream cheese on baked crostini. Top with salmon and dill. Plate and serve.
Makes about 24 crostini
