Recipe: Roasted Almond Sweet Potatoes

Hello, I have been searching for side dishes to share with you. I thought this would be great for Easter lunch or dinner with Ham, Turkey, or Roast. Our family likes to fix a big ole oven roast on holidays. Hope you enjoy this tasty take on sweet potatoes.

Roasted Almond Sweet Potatoes

Ingredients
4 medium sweet potatoes peeled and cut into 1 inch thick cubes
3 Tbls. olive oil

4 large garlic cloves, minced
1/3 cup fresh thyme leaves, plus 6 thyme sprigs for garnish
1/2 tsp. kosher salt (optional)
1/2 cup sliced California almonds


Directions
Preheat oven to 450 degrees. In a large mixing bowl, combine all ingredients except the sliced almonds and toss. Arrange potato sliced into a single layer on a heavyweight rimmed baking sheet or on a 9x13 inch baking dish. Place on the top rack of the oven and roast until tender and slightly browned, about 40 minutes.

On another baking sheet, spread out the sliced almonds. Place in the oven and toast until slightly browned, about 8-10 minutes.


Remove the almond baking sheet and the sweet potatoes. Mix together in a serving bowl and garnish with thyme sprigs. Serve warm or at room temperature. Makes 6 to 8 servings.
