Side Dish Recipes: Ideas for Biscuit Dough

What is more delicious to this ole southern gal than a fresh from the oven, biscuit. I eat my biscuits with a slather of I Can't Believe Its Not Butter and honey. I found these delicious ideas on how to use biscuit dough.
1.  Breakfast biscuits
Place each biscuit on a cookie sheet, top each biscuit with your favorite cheese shredded. Recommended is pepper jack. Bake for 17 to 20 minutes or until golden.
In a bowl whisk 12 eggs, 4 Oz's. sliced ham, 1/2 cup more cheese, and 3 sliced green onions. Cook in 12 in. nonstick skillet on medium 6 minutes or until set, stirring. Serve in spilt biscuits. Makes 6 serving.

2.  Pineapple shortcakes
Place biscuits on cookie sheet. Brush with  1 beaten egg, sprinkle with 2 Tbsp. sugar. Bake 13 to 15 minutes or until golden. In 10- inch skillet, cook 4 cups chopped fresh pineapple and 1/4 cup sugar on medium high for 5 minutes or until tender, stirring often. Beat 1/2 cup heavy cream until stiff peaks form. Divide pineapple and cream among split biscuits. Serves 8.
