Recipe: Mrs Noes Zucchini Bread
Zucchini Bread
3 eggs beaten
2 cups sugar
1 cup oil
3 tsps vanilla
2 cups grated zucchini
3 cups flour
1 tsp baking soda
3 tsps cinnamon
1 tsp salt
1/4 tsp baking powder
1 cup peanuts optional
Combine eggs, sugar, oil, vanilla, and zucchini. Sift together flour, soda, cinnamon, salt, and baking powder. Stir into egg mixture. Add nuts again optional. Fill 2 greased and floured 9x5x3 loaf pans or round pans 1/2 full.
bake at 325 degrees for 1 hour.

6 ripe bananas
4 eggs
2 1/4 cups all pupoe flour
1 tsp salt
2 tsps baking soda
1 tsp vanilla
1 cup chopped pecans, optional
Directions
Cream shortening and sugar. Mash bananas and add to creamed mixture. Add eggs, on at a time beating after each addition. Sift flour, salt, and soda together and add to banana mixture. Add vanilla and pecans,. Pour into 2 greased and floured 9x5x2 loaf pans and bake at 350 degrees for
45 minutes or until done.

I Am A Proud List Maker
I have a confession to make I have an addition that has plagued me since age of 10. I am a list maker, and have perfected the do list for the day, week, month, and yes year. I used to do it only on calendars but as the years progressed in my life it has been a daily habit.
List making helps me keep my life organized and checking off each item makes me feel great accomplishment. I keep an assortment of list pads around the house in every room. Pens as you may of guessed is also a must item.When I am at an event that is giving away pens I must have one or maybe two. My tastes for pens began in the second grade when my teacher gave me my first Bic. Oh how the ink glides so eloquently across the page when I write.
Here are a few items that keep my days happy and productive. At times I have left the list at home but writing it helps me remember what is on it. So when I get to my destination I visualize my list. It works sometimes.
About now your thinking that I must be scattered brain and your right. When my kids were growing up it worked so well to be a list maker and get all of their activities organized. Like a fine oiled machine every birthday party, holiday, school play, and room mother duty made my list. I arrived at my work each day and began my list.
Lists have been invaluable in my career as a business to business marketing agent. My supervisor would ask me meeting questions afterwards as she knew I was a keen note taker. She knew if it was noteworthy it made my notes or in the least my list. See where I am going with this? List making has been a valuable tool that has followed me through out my life.
In conclusion to this post I want to share with you that after careful scrutiny being a list maker is a noble obsession. Go ahead folks take that pen to paper and write your lists just remember to take them with you when you leave home. It makes doing those tasks so much easier, trust me.

6 tbsp Margarine, soft, 80% fat , divided
1eggs 1 3/4 cup white all purpose flour , divided 3/4 cup brown sugar substitute, granulated 2 tsp low sodium baking powder 1/2 tsp ground allspice 1/4 tsp salt 3/4 cup fat free milk 1 cup Apples, fresh, chopped 1cooking spray, for baking 1/2 tsp ground allspice | ||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||

1 Preheat oven to 400 degrees F. In a medium bowl, cream 1/4 cup of the margarine and then gradually add 1/2 cup of the brown sugar substitute, beating at medium speed with an electric mixer until it is light and fluffy. Add the egg, and then continue to mix well.
Additional Information2 In a separate bowl combine 1 1/2 cups flour, the baking powder, 1/2 teaspoon ground allspice, and salt. Now, add this dry mix to the creamed mixture along with the skim milk, stirring just until moistened. After it has mixed, stir in the finely chopped apple. 3 Spoon the batter into muffin pans coated with the cooking spray, filling each about two-thirds full. 4 To make the topping, combine the remaining 1/4 cup brown sugar, 1/2 teaspoon ground allspice in a small bowl and then cut in the remaining 2 tablespoons margarine with a pastry blender. Mix until the batter resembles coarse meal, and then sprinkle it evenly over the top of the muffins. 5 Bake for roughly 20 minutes, or until theymuffins are lightly browned.
As a decorative alternative, instead of using cooking spray and baking the muffins directly in the pan, bake them with your favorite foil or paper cupcake liners instead.

Recipe: Quesadilla Pie
Quesadilla Pie
It's a casserole. It's a pie. It's really, really good.
By The Kids Cook Monday
Ingredients: 1 rotisserie chicken (about 2 pounds), skin removed, meat shredded
2 cups chunky salsa, divided
1/4 cup reduced-fat sour cream
3 (7 1/2 inch-diameter) whole-wheat tortillas
1 1/4 cups shredded cheddar cheese, divided
1 cup baby spinach, divided
Directions:
Adult: Preheat the oven to 375 degrees F.
Kid: In a large bowl, combine the shredded chicken, 1 cup of the salsa and the sour cream. Stir until combined. Spread another 1/2 cup of the salsa onto the bottom of a 9-inch deep-dish pie plate.
Together: Layer one of the tortillas into the pie plate; top with half of the chicken mixture. Sprinkle with 1/2 cup of shredded cheddar cheese and half the spinach. Repeat layering the chicken mixture, cheddar and spinach once more. Top with the remaining tortilla, 1/2 cup salsa and 1/4 cup cheddar cheese.
Adult: Cover with foil and bake 20 minutes. Remove foil and bake 5 minutes more, or until the cheese melts. Let cool slightly before slicing into wedges.
Serves 4
