Recipe: Quesadilla Pie


Quesadilla Pie
It's a casserole. It's a pie. It's really, really good.
By The Kids Cook Monday

Ingredients: 1 rotisserie chicken (about 2 pounds), skin removed, meat shredded
2 cups chunky salsa, divided
1/4 cup reduced-fat sour cream
3 (7 1/2 inch-diameter) whole-wheat tortillas
1 1/4 cups shredded cheddar cheese, divided
1 cup baby spinach, divided

Directions:
Adult: Preheat the oven to 375 degrees F.

Kid: In a large bowl, combine the shredded chicken, 1 cup of the salsa and the sour cream. Stir until combined. Spread another 1/2 cup of the salsa onto the bottom of a 9-inch deep-dish pie plate.

Together: Layer one of the tortillas into the pie plate; top with half of the chicken mixture. Sprinkle with 1/2 cup of shredded cheddar cheese and half the spinach. Repeat layering the chicken mixture, cheddar and spinach once more. Top with the remaining tortilla, 1/2 cup salsa and 1/4 cup cheddar cheese.

Adult: Cover with foil and bake 20 minutes. Remove foil and bake 5 minutes more, or until the cheese melts. Let cool slightly before slicing into wedges.

Serves 4

Best for ages 8-11

Recipe: Spinach, Pear, and Goat Cheese Salad with Pecans

Spinach, Pear, and Goat Cheese Salad with Pecans

Ingredients

  • 1/4 cup coarsely chopped pecans
  • 1 tablespoon canola oil, divided
  • 3 Bosc pears, peeled, cored, and cut into 1/2-inch slices
  • 1 teaspoon brown sugar
  • 1 tablespoon minced shallot
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup apple juice
  • 2 teaspoons cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 (6-ounce) bag baby spinach
  • 2 ounces Gorgonzola cheese (about 1/2 cup)

    Directions
    1. Toast the pecans in a skillet over medium heat for 3 minutes or until fragrant; set aside. Add 2 teaspoons canola oil to the same skillet, and increase heat to medium-high. Add pears, and sprinkle with brown sugar; do not stir. Cook the pears 5 minutes or until lightly browned on bottom. Stir to melt the brown sugar. Transfer the pears to a plate.
    2. Add remaining 1 teaspoon oil to pan. Add shallot, salt, and pepper. Stir 30 seconds or until fragrant. Add apple juice, cider vinegar, and mustard. Whisk; simmer 3รข€“4 minutes or until slightly reduced. Add pears.
    3. Place spinach in a large serving bowl. Pour pears and dressing on top, and toss. Divide salad evenly among 4 plates. Arrange Gorgonzola and pecans on top. Serve immediately.

3 Vegetarian Recipes: Cheese Eggplant Squash Bake, Stuffed Tomatoes, Stuffed Zucchini


Cheesy Eggplant Squash Bake

Serves: 6
Cooking Time: 1 hr
What You'll Need:
    1/2 cup (1 stick) butter
    1 medium-sized eggplant, peeled and cut into ½-inch chunks
    4 medium-sized yellow squash, cut into ½-inch chunks
    2 medium-sized onions, chopped
    1 1/2 cups milk
    2 eggs
    2 cups (8 ounces) shredded sharp Cheddar cheese, divided
    1/2 cup instant rice
    1/2 teaspoon salt
    1/2 teaspoon black pepper
Instructions
    Preheat oven to 350 degrees F. Coat a 3-quart casserole dish with cooking spray.
    In a large skillet, melt butter over medium-high heat. Add eggplant, squash, and onions, and saute 6 to 8 minutes, or until vegetables are slightly tender.
    Meanwhile, in a large bowl, combine milk, eggs, 1-1/2 cups cheese, the rice, salt, and pepper; mix well. Add vegetable mixture to egg mixture; mix well.
    Pour into prepared casserole dish then sprinkle remaining 1/2 cup cheese over the top and bake 50 to 55 minutes, or until rice is tender.
Old Fashion Stuffed Tomatoes
These stuffed tomatoes are old-fashioned tasty and new-fashioned easy! They really color up a plate, too.
Serves: 4
Cooking Time: 25 min
What You'll Need:
    4 large ripe tomatoes
    4 tablespoons olive oil, divided in half
    1 medium-sized onion, chopped
    6 garlic cloves, minced
    6 anchovies, chopped
    1/4 cup chopped fresh parsley
    1/2 cup dry bread crumbs
    2 tablespoons dry white wine
    1/4 teaspoon salt
    1/4 teaspoon pepper
    Grated Parmesan cheese for sprinkling (optional)
Instructions
    Preheat oven to 350 degrees F.
    Cut tops off tomatoes; remove the center pulp; set tomato shells aside. Chop the center pulp and set aside, discarding excess juice.
    In a large skillet, heat 2 tablespoons olive oil; add onion and garlic and saute just until softened. Add tomato pulp, anchovies, parsley, bread crumbs, wine, remaining olive oil, salt, and pepper; mix well.
    Fill tomato shells with mixture and place in a greased 8-inch square baking dish. Sprinkle with Parmesan cheese, if desired.
    Bake for 20 minutes or until cheese is melted and lightly golden.
Stuffed Zucchini
Want to get the kids to beg you for veggies? Make 'em look and taste like this clever little stuffed treat and they'll gobble them up!
Serves: 6
Cooking Time: 1 hr
What You'll Need:
    3 medium-sized zucchini, sliced in half lengthwise
    2 tablespoons olive oil
    1 (4-ounce) can mushroom stems and pieces, drained and chopped
    1 small onion, chopped
    2 plum tomatoes, diced
    1/4 cup Italian-flavored bread crumbs
    1 tablespoon grated Parmesan cheese
    1/2 teaspoon salt
    1/4 teaspoon black pepper
    1/2 cup (2 ounces) shredded mozzarella cheese
Instructions
    Preheat oven to 375 degrees F. With a spoon, scoop meat out of zucchini halves; set aside shells and chop zucchini meat finely.
    In a medium-sized skillet, heat oil over medium heat and saute chopped zucchini, mushrooms, onion, and tomatoes 6 to 8 minutes, or until tender. Stir in bread crumbs, Parmesan cheese, salt, and pepper until well mixed.
    Stuff zucchini shells evenly with vegetable mixture and place in a 9- x 13-inch baking dish that has been coated with cooking spray.
    Cover tightly with aluminum foil and bake 35 minutes. Remove foil and top evenly with mozzarella cheese.
    Bake 8 to 10 minutes, or until zucchini are tender and cheese is golden.

Canine Recipe: Pumpkin Dog Biscuits

Pumpkin Dog Biscuits    
Ingredients
2 eggs
1/2 cup canned pumpkin
2 tablespoons dry milk
1/4 teaspoon sea salt
2 1/2 cups brown rice flour *
1 teaspoon dried parsley (optional)
Preheat oven to 350
Directions
In large bowl, whisk together eggs and pumpkin to smooth. Stir in dry milk, sea salt, and dried parsley (if using, optional). Add brown rice flour gradually, combining with spatula or hands to form a stiff, dry dough. Turn out onto lightly floured surface (can use the brown rice flour) and if dough is still rough, briefly knead and press to combine.
Roll dough between 1/4 – 1/2″ – depending on your dog’s chew preferences, ask first – and use biscuit or other shape cutter to punch shapes, gathering and re-rolling scraps as you go. Place shapes on cookie sheet, no greasing or paper necessary. If desired, press fork pattern on biscuits before baking, a quick up-and-down movement with fork, lightly pressing down halfway through dough. Bake 20 minutes. Remove from oven and carefully turn biscuits over, then bake additional 20 minutes. Allow to cool completely on rack before feeding to dog.
* Brown rice flour gives the biscuits crunch and promotes better dog digestion. Many dogs have touchy stomachs or allergies, and do not, like many people I know, tolerate wheat.
Makes up to 75 small (1″) biscuits or 50 medium biscuits

Recipe: Baked Stuffed Peppers (Vegetarian)

Baked Stuffed Peppers (Vegetarian)
Our over-stuffed veggie Baked Stuffed Peppers are a super change-of-pace easy side dish. Colorful red and green bell peppers serve as tasty edible bowls for a stuffing that teams with any main dish.
Serves: 4
Cooking Time:   25 min
Ingredients
  • 1/4 cup olive oil
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 1 ripe tomato, finely chopped
  • 1/4 cup chopped fresh parsley
  • 3/4 cup Italian bread crumbs
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 red or green bell peppers, split lengthwise and cleaned (see Options)
  • 1 tablespoon grated or shredded Parmesan cheese
Instructions
  1. Preheat oven to 400 degrees F. Coat an 8-inch square baking dish with cooking spray.
  2. In a large skillet, heat oil over medium heat. Add onion and garlic, and saute just until softened. Remove from heat and add remaining ingredients except pepper halves and Parmesan cheese; mix well.
  3. Fill peppers evenly with mixture and place in prepared baking dish. Sprinkle with Parmesan cheese.
  4. Add 1/4 cup water to baking dish, cover with foil, and bake 20 minutes. Remove dish from oven and carefully remove foil; return dish to oven and bake for an additional 5 to 7 minutes, or until peppers are tender and the filling is heated through. Serve immediately.

    Whole Foods at Arbor Trails is located just off Mopac 1 at 4301 W. William Cannon in South Austin. An easy drive from anywhere in  the Austin area.
    This 39,600 square foot store is staffed with 55 long term employees brought from other stores, as well as about 155 newcomers.

    Customer service comes naturally from dedicated folks who love what they do. Anyone working at Whole Foods Market can assist you, and are eager to do so. Now that is a comforting thought !


     "Health Starts Here"signs throughout the store serve as a guide for finding healthy food options. The 'Healthy Food Starts Here' resource area offers books and healthy recipes. Most are made with unprocessed whole foods, with no added oils, and no refined sugar. A Recipe Kiosk will also be available for shoppers to locate, print, and use recipes as a shopping guide.  Yet another way to help families locate healthy whole foods.

      Each department has expert Team Members to help you locate products and the Grocery department has an extensive selection of specialty diet foods. A few of the selections include vegan options, raw foods, and gluten free food.

     What struck me as brilliant about this store is the flow of traffic.You move through the front door to enter produce, floral, bulk foods (grains,massive selections), on to meat counter, seafood counter, and cheese counter. Right in front of your meats, seafood, and cheese is a large offering of wines. All meat and poultry come from animals raised on vegetarian diets with no antibiotics and no added hormones.

    How handy ! Pick up your appetizer, entree, and shop your wine all in one section.
      
       The store has Green features natural lighting fixtures, and solar panels that run the length of the buildings roof.  From reclaimed and repurposed elements, to the tailgates hanging above the check out centers to the many signs through out the store. Above produce you find a reclaimed metal fence with garden hose wound inside, making quite the unique ceiling divider. Just a few of the wonderful Green aspects that gives the Whole Foods Market Arbor Trails store that authentic South Austin feel.

    2 Recipes: Home Made Popsicles & Popsicle Mold Link

    Popsicles are my favorite cool down treat during the summer. I buy sugar free Popsicles and eat several a day during these hot Texas heat waves.
    I thought it would be fun to bring to you Popsicle recipes you can make at home.
     
    Orange and Cream Pops

    Ingredients
    • Grated peel of 1 orange
    • 1 quart vanilla ice cream, softened
    • 1 pint orange sherbet, softened
    • 10 craft sticks
    Instructions
    1. Line a 9 x 5-inch loaf pan with plastic wrap.
    2. In a medium bowl, stir the grated orange peel into the softened vanilla ice cream.
    3. Spread half the vanilla ice cream mixture over the bottom of the loaf pan. Spread the orange sherbet over it and top with the remaining vanilla ice cream mixture.
    4. Place the craft sticks into the ice cream about two inches apart in two rows. Cover, and freeze until firm.
    5. Cut into 10 pops and serve. Cover any leftovers, and keep frozen.

      Watermelon Popsicles      
      Ingredients
      • 1/2 watermelon, seeded and cut into chunks
      • Chunks of fresh fruit, such as grapes, strawberries, or kiwi fruit
      Instructions
      1. Puree watermelon and pour into Popsicle molds. Drop in chunks of fresh fruit, insert caps, and place in freezer. Serve when frozen.

    Sugar Free & No Sugar Added What Is The Difference

    I look for food and drinks that are sugar free most of the time, but do settle for no sugar added at times. I know that by reading labels which I am diligent about that no sugar added products usually are low in sugar. I make diet allowances if I am eating those foods since I am a diabetic.
      Since most folks are watching what they eat for their fitness and health regiments I bring you this article on the difference in sugar free and no sugar added labels.

         Sugar free indicated that less than 0.5 gram of sugar per serving is used.
        No sugar added means that additional sugar hasn't been put into a product, but the term has become a marketing gimmick.

     "It's on foods that won't have sugar added such as plain yogurt for example - to entice you to buy them," says Constance Brown Riggs R.D. a spokesperson for the American Diabetic Association.
     
       Ms. Riggs recommends that you read ingredients instead of relying on these labels. Your body processes all sugar in the same way, so if your watching your weight monitor your calories.

    Recipe: Italian Herb Baked Chicken & Pasta



    Every evening I join my Husband, David in the kitchen to cook dinner. He is our house chef so already knows what we are preparing before I do.
    Tonight we prepared, OK I just assist mainly, this Italian Herb Baked Chicken & Pasta. The recipe is property of McCormick as it was taken from their packet, stating that this is a NEW recipe. My Son In Law had two helpings and shared that he thought it was good. I had one serving and enjoyed it greatly, must admit I ate two rolls with it. Delicious is my final thought on this dish, filling, and served all 4 adults in our household with ample helpings.
    Italian Herb Baked Chicken & Pasta
    Seasoning Mix

    Ingredients2    cups uncooked medium pasta, such as rotini, penne or ziti
    1    pkg. McCormick Seasoning Mix Italian Herb Baked Chicken & Pasta
    1    lb.  uncooked boneless skinless chicken breasts,  cut into 1 inch cubes
    2    cups shredded mozzarella cheese, divided

    1  1.2  cups water
    1   can (14 1/2 oz.) petite diced tomatoes, do not drain

    DirectionsPlace pasta chicken and 1 cup of the cheese in a 13x9 inch baking dish.
    Mix, water, seasoning mix and tomatoes until well blended. Pour over pasta and chicken. Stir to coat well, making sure most of the pasta is covered with sauce. Cover with foil.

    Bake in preheated 375 degrees oven 45 minutes or until chicken is cooked through. Remove foil and stir. Sprinkle with remaining 1 cup cheese.
    Bake uncovered 5 minutes longer or until cheese is melted. Let stand 5 minutes. Sauce will continue to thicken upon standing.

    Dessert Recipe: Healthified Banana Pudding

    Go bananas with a made-over dessert favorite that won't pack on the pounds! It has 32% fewer calories, 87% less fat, and 90% less sat fat than the original recipe.

    Healthified Banana Pudding
    Ingredients

    3    cups   fat-free (skim) milk
    2    boxes (4-serving size each) French vanilla instant pudding and pie filling mix
    4    containers(6 oz each) Yoplait® Original 99% Fat Free banana creme or French vanilla yogurt
    1    container(8 oz) frozen fat-free whipped topping, thawed
    48    reduced-fat vanilla wafer cookies
    6    small bananas, sliced
    Additional banana slices for garnish, if desired
    Directions 1. In large bowl, beat milk and pudding mix with electric mixer on low speed until well mixed; beat in yogurt. Fold in whipped topping.
    2. Place 24 vanilla wafers in a single layer in ungreased 13x9-inch (3-quart) glass baking dish. Spoon half of the pudding mixture over wafers. Place 6 sliced bananas over pudding mixture. Spoon remaining pudding mixture over bananas. Arrange remaining 24 vanilla wafers over top of pudding.

    Review: Mama Jacks Hamburgers




    Our home if approximately 5 miles from the small town of Pflugerville, TX. We use the local post office in Pflugerville and frequent a small hamburger joint by the name of Mama Jacks. It is run by a family that makes the best home made down home tasting hamburgers and fries. If I had to guess it has been in the small little building for over 20 years. I thought it would be fun to show you my cheeseburger. Not far from the local High School and the students eat there daily.
    Best of all is their prices, April ordered a hamburger and onion rings, I ordered a cheeseburger and french fries with large drinks for a total of $11 !!


    So here is a SHOUT OUT for Mama Jacks in Pflugerville TX.
    If you live in or near a small town and have a locally owned Hamburger Joint tell me about it.

    Mama Jacks Hamburgers has a take one leave one free book exchange.
    I thought that was so great and I found a book to take home.
    Now that is clever marketing especially to a reader like myself.
    There is just something about Small Town charm you just can't get in a big city.
